This track season, I was so concerned with who sits where at Saratoga Race Course, covering the Saratoga Sale while home sick with Covid and the humans of Travers Day that the deadline for our fall issue snuck up on me. That’s how, on one mid-August weekend, I was forced to eat diner pancakes for five straight meals.

OK, that might be an exaggeration, but it’s based in a buttery, syrupy reality.
